Thursday Sept 13th: Ian worked at Underscar Manor from 1999-2009. He worked as part of a strong team of chefs under Head Chef Robert Thornton who together created modern British food that was in keeping with the Hotel and surrounding area. During this time, they were awarded 2/3 rosettes, a huge achievement with the limited resources available.
Since 2009, Ian has been Head Chef at the Lyzzick Hall Hotel, just outside Keswick. Their approach is simple – using fantastic local produce from small local businesses to create food that is in keeping with this fantastic hotel. Paired with great service and a relaxed and fun atmosphere in the restaurant, Ian and his team are able to offer a unique dining experience.
Ian has been inspired by Simon Rogan at L’Enclume and Rene Redzepi at Noma. “I love the way they use both their extensive knowledge and passion for locally produced and grown produce to make dishes that are so fresh and individual without ever being over complicated. That is my aspiration for the Lyzzick kitchen”.
Ian lives in Keswick with his wife, two children and his dog.
